4 ears of corn, husked
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mayonnaise
1/4 cup sour cream
1/2 cup crumbled cotija cheese
1 tablespoon fresh lime juice
1 clove garlic, minced
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges

Instructions

Preheat a grill or grill pan over medium-high heat.
In a small bowl, combine chili powder, smoked paprika, ground cumin, garlic powder, salt, and black pepper.
Toss the shrimp with olive oil and half of the spice mixture until evenly coated.
Brush the corn with a little olive oil and sprinkle with the remaining spice mixture.
Place the corn on the grill and cook for about 10-12 minutes, turning occasionally, until charred and tender.
At the same time, grill the shrimp for 2-3 minutes per side until pink and opaque. Remove from heat.

Add the grilled shrimp to the bowl with the corn kernels.
