When Dinner Calls for Slow Cooker Chicken Ramen on a Rainy Night

There’s something about a rainy evening that makes you crave a bowl of comforting warmth. On a night like that, I found myself waiting a little longer than usual for the slow cooker to do its magic, the house filling with a subtle mix of ginger, garlic, and miso aromas. The soft hum of the slow cooker in the background was oddly soothing, even as I distractedly flipped through a magazine, half-watching the clock tick toward dinner time. When I finally lifted the lid, the steam carried the promise of a meal that would wrap around me like a cozy blanket. The tender chicken, mingled with earthy mushrooms and bright carrots, felt like a little celebration for the senses, even if I’d forgotten to put on an apron and ended up with a small splash of broth on my shirt.

Why You’ll Love It:

  • This ramen is a hands-off kind of comfort, letting the slow cooker do most of the work while you get on with your day.
  • The broth is rich and layered, but it’s not fussy — sometimes simple is exactly what dinner should be.
  • Adding the noodles and spinach near the end keeps everything fresh and perfectly textured, avoiding that mushy noodle pitfall.
  • It’s versatile enough to feel special, but easy enough for a weeknight meal when you’re juggling too much.

Even if you’re new to slow cooking ramen, this recipe is forgiving. The timing doesn’t have to be exact, and you can tweak the veggies or spice level to suit what you have on hand or your mood. It’s a meal that fits into your life, not the other way around.

  • Cook Time: 6 hours
  • Total Time: 6 hours 15 minutes
  • Yield: 4 1x

Ingredients

Scale

1 pound boneless, skinless chicken thighs
6 cups low-sodium chicken broth
1 cup water
1/4 cup soy sauce
2 tablespoons miso paste
1 tablespoon grated fresh ginger
3 cloves garlic, minced
1 tablespoon sesame oil
2 medium carrots, peeled and sliced into thin rounds
1 cup sliced shiitake mushrooms
4 green onions, sliced
4 ounces dried ramen noodles
2 large eggs
1 cup baby spinach leaves
1 tablespoon rice vinegar
1 teaspoon sugar
1/2 teaspoon crushed red pepper flakes

Instructions

Place the chicken thighs in the slow cooker.
In a medium bowl, whisk together chicken broth, water, soy sauce, miso paste, grated ginger, minced garlic, sesame oil, rice vinegar, sugar, and crushed red pepper flakes until miso paste is dissolved.
Pour the broth mixture over the chicken in the slow cooker.
Add sliced carrots, shiitake mushrooms, and half of the sliced green onions to the slow cooker.
Cover and cook on low for 6 hours.
About 20 minutes before serving, carefully remove the chicken thighs from the slow cooker and shred them using two forks.
Return the shredded chicken to the slow cooker.
Add the dried ramen noodles and baby spinach leaves to the slow cooker. Stir gently to combine.
Cover and cook on high for 15 minutes, or until noodles are tender and spinach is wilted.
While the noodles cook, bring a small pot of water to a boil. Carefully add the eggs and boil for 7 minutes for soft-boiled eggs.
Remove eggs and place in ice water for 2 minutes, then peel and cut in half.
Ladle the ramen into bowls, top each with a halved soft-boiled egg and the remaining sliced green onions.
Serve immediately and enjoy.

Kitchen Notes: I usually use a standard slow cooker—nothing fancy—and it does the job without any fuss. If you’re serving this for friends, a crisp cucumber salad or a simple pickled side can lighten the bowl nicely. For a different twist, I’ve sometimes swapped shiitake mushrooms for cremini or added an extra handful of spinach. And I haven’t tested it with other noodles, but something like soba might work if you add them at the very end. Just watch the timing so they don’t turn to mush.

FAQ:

Can I make this gluten-free? If you swap the soy sauce for tamari and use gluten-free noodles, it should work, but I haven’t tried it personally.

Is it okay to prepare the eggs ahead? Soft-boiled eggs are best fresh, but you can refrigerate peeled eggs for a day if needed. Just be gentle when reheating.

Can I freeze leftovers? The broth and chicken freeze well separately, but noodles and eggs don’t hold up as well in the freezer.

Give this Slow Cooker Chicken Ramen a try when you want something soothing but not complicated. Once you taste the broth and tender chicken together, you’ll understand why it’s worth waiting for.
