Sausage & Peppers

A classic Italian-American dish featuring savory sausages cooked with sweet bell peppers and onions in a flavorful tomato sauce. Perfect served over pasta, on a hoagie roll, or as a hearty main dish.

1 pound Italian sausage links, casings removed
2 tablespoons olive oil
1 large yellow onion, sliced
3 bell peppers (1 red, 1 green, 1 yellow), sliced into strips
3 cloves garlic, minced
1 (14.5-ounce) can diced tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
Fresh parsley, chopped, for garnish

Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the Italian sausage to the skillet, breaking it up with a spoon, and cook until browned and cooked through, about 7-8 minutes. Remove the sausage from the skillet and set aside.
Add the remaining 1 tablespoon of olive oil to the same skillet.
Add the sliced onion and bell peppers to the skillet and sauté until they begin to soften, about 5 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Return the cooked sausage to the skillet with the vegetables.
Add the diced tomatoes, dried oregano, dried basil, crushed red pepper flakes, salt, and black pepper.
Stir to combine all ingredients, then reduce the heat to low and simmer uncovered for 10 minutes, stirring occasionally.
Taste and adjust seasoning if necessary.
Garnish with chopped fresh parsley before serving.
