A hearty and flavorful white bean turkey chili made with lean ground turkey, creamy white beans, and a blend of spices. Perfect for a comforting weeknight dinner.
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 pound lean ground turkey
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
1/2 teaspoon salt
2 cups low sodium chicken broth
2 (15-ounce) cans white beans, drained and rinsed
1 (4-ounce) can diced green chilies
1 cup frozen corn kernels
1/4 cup chopped fresh cilantro
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until softened, about 5 minutes.
Add minced garlic and cook for 1 minute until fragrant.
Add ground turkey to the pot and cook, breaking it up with a spoon, until browned and cooked through, about 7-8 minutes.
Stir in ground cumin, dried oregano, chili powder, cayenne pepper, smoked paprika, black pepper, and salt. Cook for 1 minute to toast the spices.
Pour in chicken broth and stir to combine.
Add white beans, diced green chilies, and frozen corn to the pot. Stir well.
Bring the chili to a simmer, then reduce heat to low and cook uncovered for 20 minutes, stirring occasionally.
Remove from heat and stir in chopped fresh cilantro.
Serve hot.
