Ground Turkey Teriyaki Stir Fry

A quick and flavorful Ground Turkey Teriyaki Stir Fry packed with vegetables and a savory homemade teriyaki sauce. Perfect for a healthy weeknight dinner.

1 tablespoon vegetable oil
1 pound ground turkey
1 medium red bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
1 cup broccoli florets
1 medium carrot, peeled and thinly sliced
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 cup low sodium soy sauce
2 tablespoons honey
2 tablespoons water
1 tablespoon rice vinegar
1 teaspoon cornstarch
1/2 teaspoon sesame oil
2 green onions, thinly sliced
1 tablespoon toasted sesame seeds

Instructions

In a small bowl, whisk together soy sauce, honey, water, rice vinegar, cornstarch, and sesame oil until smooth. Set aside the teriyaki sauce.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add ground turkey to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
Add minced garlic and grated ginger to the turkey; cook for 1 minute until fragrant.
Add sliced red bell pepper, yellow bell pepper, broccoli florets, and sliced carrot to the skillet. Stir fry the vegetables with the turkey for 5-6 minutes until they are tender-crisp.
Pour the prepared teriyaki sauce over the turkey and vegetables. Stir well to coat everything evenly.
Cook for an additional 2-3 minutes, stirring frequently, until the sauce thickens and glazes the stir fry.
Remove from heat and garnish with sliced green onions and toasted sesame seeds.
Serve immediately over steamed rice or noodles if desired.
