A quick and healthy air fryer salmon dinner featuring perfectly cooked salmon fillets with crispy skin, served alongside roasted asparagus and baby potatoes. This meal is easy to prepare, flavorful, and ready in under 30 minutes.
2 salmon fillets, skin on, about 6 ounces each
1 tablespoon olive oil, divided
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
8 ounces baby potatoes, halved
8 ounces asparagus, trimmed
1/2 lemon, cut into wedges
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a medium bowl, toss the halved baby potatoes with 1/2 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
Place the potatoes in the air fryer basket in a single layer and cook for 10 minutes.
While the potatoes cook, pat the salmon fillets dry with paper towels.
Brush both sides of the salmon fillets with the remaining 1/2 tablespoon olive oil.
Sprinkle garlic powder, smoked paprika, 1/4 teaspoon salt, and 1/4 teaspoon black pepper evenly over both sides of the salmon.
After the potatoes have cooked for 10 minutes, shake the basket or stir the potatoes, then add the asparagus on top of the potatoes in a single layer.
Place the salmon fillets skin-side down on top of the asparagus and potatoes.
Cook everything together for an additional 8 minutes, or until the salmon reaches an internal temperature of 145°F (63°C) and the vegetables are tender.
Carefully remove the salmon, asparagus, and potatoes from the air fryer.
Serve the salmon with roasted asparagus and baby potatoes, garnished with lemon wedges.
