A quick and healthy air fryer vegetable stir fry featuring a colorful mix of fresh vegetables tossed in a savory soy-ginger sauce. Perfect as a side dish or a light main course.

1 medium red bell pepper, sliced into 1/2-inch strips
1 medium yellow bell pepper, sliced into 1/2-inch strips
1 medium zucchini, sliced into 1/4-inch thick half-moons
1 cup broccoli florets, cut into bite-sized pieces
1 cup snap peas, trimmed
1 medium carrot, peeled and sliced into thin rounds
1/2 medium red onion, sliced into thin wedges
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
3 tablespoons low sodium soy sauce
1 tablespoon rice vinegar
1 teaspoon honey
1/4 teaspoon crushed red pepper flakes
1 tablespoon toasted sesame seeds

Instructions

Preheat the air fryer to 375°F (190°C) for 5 minutes.
In a large mixing bowl, combine the sliced red bell pepper, yellow bell pepper, zucchini, broccoli florets, snap peas, carrot slices, and red onion wedges.
In a small bowl, whisk together the olive oil, minced garlic, grated ginger, soy sauce, rice vinegar, honey, and crushed red pepper flakes until well combined.
Pour the sauce over the mixed vegetables and toss thoroughly to coat all pieces evenly.
Place the coated vegetables in the air fryer basket in a single layer. You may need to cook in batches to avoid overcrowding.
Air fry the vegetables at 375°F (190°C) for 10-12 minutes, shaking the basket halfway through cooking to ensure even crisping and cooking.
Once cooked, transfer the vegetables to a serving dish and sprinkle with toasted sesame seeds.
Serve immediately as a side dish or over steamed rice or noodles for a complete meal.
