Boursin Chicken with Garlic and Herbs

4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
4 ounces Boursin garlic and herb cheese
2 cloves garlic, minced
1 teaspoon fresh parsley, finely chopped
1 teaspoon fresh chives, finely chopped
1/2 teaspoon dried thyme
1/2 cup chicken broth
1 tablespoon unsalted butter

Instructions

Preheat the oven to 375°F (190°C).
Season both sides of the chicken breasts with salt and black pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Add the chicken breasts to the skillet and sear for 3-4 minutes on each side until golden brown.
In a small bowl, mix the Boursin cheese, minced garlic, chopped parsley, chopped chives, and dried thyme until well combined.
Spread the Boursin mixture evenly over the top of each seared chicken breast.
Pour the chicken broth into the skillet around the chicken breasts.
Transfer the skillet to the preheated oven and bake for 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove the skillet from the oven and place it back on the stovetop over medium heat.
Add the unsalted butter to the skillet and stir into the pan juices to create a rich sauce.
Spoon the sauce over the chicken breasts and serve immediately.
