1/4 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.
In a large bowl, beat the granulated sugar, light brown sugar, and eggs together until smooth and creamy.
Add the vegetable oil and 1 teaspoon vanilla extract to the sugar and egg mixture and mix until combined.

Pour the remaining carrot cake batter over the cream cheese layer and spread evenly.

Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Remove the loaf from the oven and allow it to cool in the pan for 15 minutes.
