Chinese Chicken Salad

A refreshing and crunchy Chinese Chicken Salad featuring tender chicken, crisp vegetables, and a tangy sesame-ginger dressing.

2 boneless, skinless chicken breasts
1 tablespoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups shredded Napa cabbage
1 cup shredded red cabbage
1 cup shredded carrots
1 cup thinly sliced red bell pepper
1/2 cup chopped green onions (green parts only)
1/4 cup chopped fresh cilantro
1/4 cup chopped roasted peanuts
1/4 cup crispy chow mein noodles
3 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon toasted sesame oil
1 teaspoon grated fresh ginger
1 garlic clove, minced
1 teaspoon lime juice

Instructions

Preheat a skillet over medium heat and add vegetable oil.
Season the chicken breasts with salt and black pepper on both sides.
Cook the chicken breasts in the skillet for 5 minutes on each side or until fully cooked and internal temperature reaches 165°F (74°C).
Remove the chicken from the skillet and let it rest for 5 minutes, then slice thinly.
In a large mixing bowl, combine shredded Napa cabbage, shredded red cabbage, shredded carrots, sliced red bell pepper, chopped green onions, and chopped cilantro.
In a small bowl, whisk together rice vinegar, soy sauce, honey, toasted sesame oil, grated fresh ginger, minced garlic, and lime juice until well combined to make the dressing.
Pour the dressing over the mixed vegetables and toss well to coat evenly.
Add the sliced chicken to the salad and gently toss to combine.
Sprinkle chopped roasted peanuts and crispy chow mein noodles on top just before serving for added crunch.
