1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large ripe bananas, mashed
3/4 cup granulated sugar
1 large egg, beaten
1/3 cup unsalted butter, melted
1 teaspoon vanilla extract
Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper muffin liners.
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
In a separate medium bowl, combine the mashed bananas, granulated sugar, beaten egg, melted butter, and vanilla extract. Mix until well combined.
Pour the banana mixture into the dry ingredients and stir gently until just combined. Do not overmix; the batter should be slightly lumpy.
Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and allow them to cool in the tin for 5 minutes.
