4 boneless skinless chicken thighs
2 tablespoons olive oil
3 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
1 teaspoon dried oregano
1/3 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup parmesan cheese, grated
1/4 cup fresh basil leaves, chopped
Salt, to taste
Black pepper, to taste
Heat olive oil in a large skillet over medium-high heat.
Season chicken thighs with salt and black pepper.
Add chicken thighs to the skillet and pan-sear until golden brown on both sides, about 4-5 minutes per side.
Remove chicken and set aside.
In the same skillet, add minced garlic, crushed red pepper flakes, dried oregano, and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
Pour in heavy cream and bring to a simmer.
Stir in parmesan cheese until melted and the sauce is creamy.
Return chicken thighs to the skillet, spoon sauce over them, cover, and simmer on low heat for 10-12 minutes until chicken is cooked through.
Stir in fresh basil leaves just before serving.
Plate chicken thighs in a shallow bowl, spoon sauce over, and garnish with additional fresh basil leaves.
