A quick and comforting one-pan meal featuring smoky kielbasa sausage, tender potatoes, and a rich creamy sauce, perfect for a satisfying weeknight dinner.
1 pound kielbasa sausage, sliced into 1/2-inch rounds
1 pound baby potatoes, halved
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Salt, to taste
Black pepper, to taste
2 tablespoons chopped fresh parsley
Heat olive oil in a large skillet over medium heat.
Add the sliced kielbasa to the skillet and cook for 4-5 minutes until browned on both sides. Remove kielbasa from the skillet and set aside.
In the same skillet, add the halved baby potatoes cut side down. Cook for 10 minutes, stirring occasionally, until potatoes are golden and tender.
Add the diced onion to the skillet with the potatoes and cook for 3-4 minutes until softened.
Stir in the minced garlic and cook for 1 minute until fragrant.
Return the kielbasa to the skillet.
Pour in the heavy cream and chicken broth, stirring to combine.
Add smoked paprika, dried thyme, salt, and black pepper. Stir well.
Reduce heat to low and simmer for 5 minutes until the sauce thickens slightly.
Sprinkle chopped fresh parsley over the skillet before serving.
