A simple and flavorful crock pot chicken roast recipe that yields tender, juicy chicken infused with herbs and garlic. Perfect for an easy dinner with minimal prep.
1 whole chicken (about 4 pounds), giblets removed
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon garlic powder
4 cloves garlic, peeled and smashed
1 medium onion, quartered
2 medium carrots, peeled and cut into 2-inch pieces
2 stalks celery, cut into 2-inch pieces
1/2 cup chicken broth
Pat the whole chicken dry with paper towels.
In a small bowl, mix together salt, black pepper, paprika, dried thyme, dried rosemary, and garlic powder.
Rub the seasoning mixture all over the chicken, including inside the cavity.
Place the smashed garlic cloves, quartered onion, carrots, and celery into the bottom of the crock pot.
Place the seasoned chicken on top of the vegetables in the crock pot.
Pour the chicken broth around the chicken, being careful not to wash off the seasoning.
Cover and cook on low for 4 to 4 1/2 hours, or until the internal temperature of the chicken reaches 165°F (74°C) and the juices run clear when pierced with a fork.
Carefully remove the chicken from the crock pot and let it rest for 10 minutes before carving.
Serve the chicken with the cooked vegetables and spoon some of the cooking juices over the top.
