Air Fryer Coconut Shrimp with Dipping Sauce

Crispy and golden air fryer coconut shrimp served with a sweet and tangy dipping sauce. This easy recipe delivers a delicious appetizer or snack that’s perfect for any occasion.

1 pound large shrimp, peeled and deveined, tails on
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1 cup shredded sweetened coconut
1 cup panko breadcrumbs
Cooking spray
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon lime juice
1 teaspoon honey

Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a shallow bowl, combine the all-purpose flour, salt, and black pepper.
In a second shallow bowl, beat the eggs until smooth.
In a third shallow bowl, mix the shredded sweetened coconut and panko breadcrumbs together.
Dredge each shrimp first in the flour mixture, shaking off excess.
Dip the shrimp into the beaten eggs, then coat evenly with the coconut and panko mixture.
Place the coated shrimp in a single layer in the air fryer basket. Lightly spray the shrimp with cooking spray.
Cook the shrimp in the air fryer at 400°F (200°C) for 8 to 10 minutes, flipping halfway through, until golden brown and crispy.
While the shrimp cooks, prepare the dipping sauce by whisking together mayonnaise, sweet chili sauce, lime juice, and honey in a small bowl until smooth.
Serve the crispy coconut shrimp hot with the prepared dipping sauce on the side.
