Garlic Butter Beef Rice Skillet

1 tablespoon olive oil
1 pound ground beef
1 medium yellow onion, diced
4 cloves garlic, minced
1 cup long grain white rice, rinsed
2 cups beef broth
3 tablespoons unsalted butter
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon smoked paprika
2 tablespoons chopped fresh parsley

Instructions

Heat the olive oil in a large skillet over medium-high heat.
Add the ground beef to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
Add the diced onion to the skillet and cook until softened, about 3 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the rinsed rice to the skillet and stir to combine with the beef mixture.
Pour in the beef broth, then add salt, black pepper, dried thyme, and smoked paprika. Stir well.
Bring the mixture to a boil, then reduce heat to low and cover the skillet with a lid.
Simmer for 15 minutes, or until the rice is tender and has absorbed the liquid.
Remove the skillet from heat and stir in the unsalted butter until melted and combined.
Sprinkle chopped fresh parsley over the top before serving.
