A fresh and flavorful Grilled Chicken Caprese Salad featuring juicy grilled chicken breasts, ripe tomatoes, creamy mozzarella, and fragrant basil, all drizzled with a balsamic glaze for a perfect summer meal.
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 large ripe tomatoes, sliced
8 ounces fresh mozzarella cheese, sliced
1 cup fresh basil leaves
2 tablespoons balsamic vinegar
1 tablespoon honey
2 tablespoons extra virgin olive oil
Preheat the grill to medium-high heat.
Brush both sides of the chicken breasts with 1 tablespoon olive oil and season evenly with kosher salt and black pepper.
Grill the chicken breasts for 5-6 minutes on each side or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
While the chicken is grilling, prepare the balsamic glaze by combining balsamic vinegar and honey in a small saucepan over medium heat. Bring to a simmer and cook for 4-5 minutes until slightly thickened. Remove from heat and let cool.
Once the chicken is done, remove it from the grill and let it rest for 5 minutes before slicing into thin strips.
On a large serving platter, arrange alternating slices of tomato and mozzarella cheese.
Scatter fresh basil leaves over the tomato and mozzarella slices.
Place the sliced grilled chicken on top of the arranged salad.
Drizzle the salad with the balsamic glaze and 2 tablespoons of extra virgin olive oil.
Serve immediately and enjoy.
