Grilled Chicken with Sweet Potato

A simple and delicious grilled chicken paired with tender, smoky sweet potatoes. Perfect for a healthy and flavorful meal.

4 boneless, skinless chicken breasts
2 medium sweet potatoes, peeled and cut into 1/2-inch thick rounds
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon dried thyme
1 lemon, juiced

Instructions

Preheat the grill to medium-high heat (about 400°F or 200°C).
In a large bowl, combine 1 tablespoon olive oil, smoked paprika, garlic powder, black pepper, salt, and dried thyme.
Add the chicken breasts to the bowl and coat evenly with the spice mixture.
In another bowl, toss the sweet potato rounds with the remaining 1 tablespoon olive oil and a pinch of salt.
Place the sweet potatoes on the grill and cook for 10-12 minutes, turning occasionally, until tender and grill marks appear.
Place the chicken breasts on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Remove the chicken and sweet potatoes from the grill.
Drizzle the lemon juice over the grilled chicken breasts.
Serve the grilled chicken alongside the sweet potatoes.
