1 pound ground turkey
1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 medium zucchini, diced
1 cup cherry tomatoes, halved
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup low sodium chicken broth
2 tablespoons chopped fresh parsley

Instructions

Heat olive oil in a large skillet over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add minced garlic and cook for 30 seconds until fragrant.
Add ground turkey to the skillet and cook, breaking it apart with a spoon, until no longer pink, about 6-8 minutes.
Stir in diced red bell pepper and zucchini, cooking for 5 minutes until vegetables are tender.
Add cherry tomatoes, dried oregano, ground cumin, smoked paprika, salt, and black pepper. Stir to combine.
Pour in chicken broth, cover the skillet, and simmer for 5 minutes to allow flavors to meld and vegetables to soften further.
Remove the lid and cook for an additional 2 minutes to reduce excess liquid if needed.
Sprinkle chopped fresh parsley over the skillet and stir before serving.
