A flavorful and nutritious high protein chicken fajita bowl packed with tender grilled chicken, sautéed bell peppers and onions, served over a bed of brown rice and black beans. Perfect for a healthy and satisfying meal.
1 pound boneless skinless chicken breast, thinly sliced
1 tablespoon olive oil, divided
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 large red bell pepper, thinly sliced
1 large green bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
2 cups cooked brown rice
1 cup canned black beans, drained and rinsed
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
1/2 cup shredded reduced-fat cheddar cheese
1/4 cup plain Greek yogurt
In a medium bowl, combine chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
Add the sliced chicken breast to the bowl and toss with 1/2 tablespoon olive oil and the spice mixture until evenly coated. Set aside to marinate for 10 minutes.
Heat a large skillet over medium-high heat and add the remaining 1/2 tablespoon olive oil.
Add the marinated chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and slightly browned. Remove chicken from skillet and set aside.
In the same skillet, add the sliced red and green bell peppers and yellow onion. Sauté for 5-6 minutes until vegetables are tender-crisp.
Return the cooked chicken to the skillet with the vegetables and stir to combine. Cook for an additional 1-2 minutes to heat through.
To assemble each bowl, divide the cooked brown rice evenly among four bowls.
Top each bowl with black beans, the chicken and vegetable mixture, shredded cheddar cheese, and a dollop of plain Greek yogurt.
Garnish with chopped fresh cilantro and serve with lime wedges on the side.
