Kodiak Muffin No Banana

2 cups Kodiak Cakes Power Cakes Flapjack and Waffle Mix
1/2 cup unsweetened applesauce
1/4 cup honey
2 large eggs
1/2 cup plain Greek yogurt
1/2 cup milk
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup fresh blueberries

Instructions

Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
In a large mixing bowl, whisk together the Kodiak Cakes Power Cakes mix, baking powder, ground cinnamon, and salt.
In a separate bowl, combine the applesauce, honey, eggs, Greek yogurt, milk, and vanilla extract. Whisk until smooth.
Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Do not overmix.
Fold in the fresh blueberries carefully to distribute them evenly.
Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and allow them to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
