Kodiak Muffin with Greek Yogurt

A wholesome Kodiak muffin made with Kodiak Power Cakes mix and Greek yogurt for added moisture and protein. Perfect for a nutritious breakfast or snack.

1 cup Kodiak Power Cakes Buttermilk Flavored Power Cake Mix
1/2 cup plain Greek yogurt
1/4 cup milk
1 large egg
2 tablespoons honey
1 teaspoon baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Instructions

Preheat the oven to 375°F (190°C). Line a muffin tin with 6 paper liners or grease the muffin cups.
In a large mixing bowl, combine the Kodiak Power Cakes mix, baking powder, and salt. Stir to blend evenly.
In a separate bowl, whisk together the Greek yogurt, milk, egg, honey, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix.
Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer to a wire rack to cool completely before serving.
