A quick and easy low carb dinner made with ground turkey, fresh vegetables, and flavorful spices all cooked in one pot for minimal cleanup.
1 tablespoon olive oil
1 pound ground turkey
1 medium yellow onion, diced
3 cloves garlic, minced
1 medium zucchini, diced
1 medium red bell pepper, diced
1 cup cherry tomatoes, halved
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
2 cups fresh spinach, roughly chopped
1/4 cup fresh parsley, chopped
Heat the olive oil in a large skillet or pot over medium heat.
Add the diced onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 6-8 minutes.
Stir in the diced zucchini, red bell pepper, and cherry tomatoes.
Add the dried oregano, ground cumin, smoked paprika, crushed red pepper flakes, salt, and black pepper. Stir well to combine.
Cover the pot and cook for 8-10 minutes, stirring occasionally, until the vegetables are tender.
Remove the lid and stir in the chopped spinach and fresh parsley. Cook for an additional 1-2 minutes until the spinach wilts.
Adjust seasoning with additional salt and pepper if needed.
Serve hot directly from the pot.
