A flavorful and easy make-ahead Italian chicken dish marinated in herbs, garlic, and lemon, perfect for preparing in advance and baking when ready.
4 boneless, skinless chicken breasts
3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
In a medium bowl, combine the extra virgin olive oil, minced garlic, fresh lemon juice, lemon zest, dried oregano, dried basil, dried thyme, salt, black pepper, and crushed red pepper flakes to create the marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated.
Seal the bag or cover the dish and refrigerate for at least 2 hours or up to 24 hours to allow the flavors to develop.
Preheat the oven to 375°F (190°C).
Remove the chicken from the marinade and place the breasts in a single layer in a baking dish.
Sprinkle the grated Parmesan cheese evenly over the chicken breasts.
Bake the chicken in the preheated oven for 30 to 35 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Remove the chicken from the oven and let it rest for 5 minutes.
Garnish with chopped fresh parsley before serving.
