2 tablespoons olive oil
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
1 medium yellow onion, diced
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
4 cups low-sodium chicken broth
1 cup heavy cream
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
2 cups fresh baby spinach
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Heat olive oil in a large pot over medium heat.
Add the diced onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Add the chicken thigh pieces to the pot and cook for 5-7 minutes until browned on all sides.
Stir in the chopped sun-dried tomatoes, dried oregano, dried basil, and crushed red pepper flakes.
Pour in the chicken broth, stirring to combine. Bring the mixture to a boil, then reduce heat to low and simmer for 15 minutes until the chicken is cooked through.
Slowly stir in the heavy cream and continue to simmer for another 5 minutes, allowing the soup to thicken slightly.
Season with salt and black pepper to taste.
Add the fresh baby spinach and cook for 2 minutes until wilted.
Remove the pot from heat and stir in the grated Parmesan cheese and chopped fresh parsley.
Serve hot, garnished with additional Parmesan and parsley if desired.
