One Pot Chicken Dumplings

A comforting and hearty one pot meal featuring tender chicken, savory vegetables, and fluffy homemade dumplings cooked all together for an easy and delicious dinner.

2 tablespoons olive oil
1 medium yellow onion, diced
3 medium carrots, peeled and diced
3 celery stalks, diced
3 garlic cloves, minced
8 cups low sodium chicken broth
2 cups cooked chicken, shredded
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon black pepper
1 cup whole milk
4 tablespoons unsalted butter, melted

Instructions

Heat olive oil in a large pot over medium heat.
Add diced onion, carrots, and celery to the pot and sauté for 5-7 minutes until vegetables are softened.
Add minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and bring to a simmer.
Stir in shredded chicken, dried thyme, dried parsley, salt, and black pepper.
In a medium bowl, whisk together flour, baking powder, salt, and black pepper for the dumplings.
Add milk and melted butter to the dry ingredients and stir until just combined to form a thick batter.
Drop spoonfuls of the dumpling batter onto the simmering soup by the tablespoon, spacing them evenly across the surface.
Cover the pot with a lid and cook for 15-20 minutes without lifting the lid, until dumplings are puffed and cooked through.
Remove from heat and let sit covered for 5 minutes before serving.
