One Pot Creamy Penne Alfredo

A rich and creamy one pot penne Alfredo recipe that’s quick and easy to make, perfect for a comforting weeknight dinner with minimal cleanup.

12 ounces penne pasta
4 cups whole milk
2 cups low sodium chicken broth
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/2 cup unsalted butter
1 cup freshly grated Parmesan cheese
2 tablespoons all-purpose flour
2 tablespoons chopped fresh parsley

Instructions

In a large deep skillet or wide pot, melt the butter over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant, stirring frequently to avoid burning.
Sprinkle the flour over the melted butter and garlic, whisking constantly to form a roux. Cook for 1-2 minutes until lightly golden.
Slowly pour in the whole milk and chicken broth while whisking continuously to prevent lumps.
Add salt, black pepper, and crushed red pepper flakes to the liquid mixture and stir well.
Bring the mixture to a gentle simmer over medium heat.
Add the penne pasta to the pot and stir to submerge it in the liquid.
Cook uncovered, stirring frequently, for about 12-15 minutes or until the pasta is tender and most of the liquid has been absorbed.
Reduce heat to low and stir in the grated Parmesan cheese until melted and the sauce is creamy.
Taste and adjust seasoning with additional salt and pepper if needed.
Remove from heat and sprinkle chopped fresh parsley over the top before serving.
