One Pot Creamy Tuscan Chicken Pasta

A delicious and easy one pot meal featuring tender chicken breasts, sun-dried tomatoes, spinach, and pasta in a creamy garlic Parmesan sauce. Perfect for a comforting weeknight dinner with minimal cleanup.

2 tablespoons olive oil
1 pound boneless skinless chicken breasts, cut into bite-sized pieces
4 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups chicken broth
1 cup heavy cream
8 ounces uncooked penne pasta
1/2 cup sun-dried tomatoes, chopped
3 cups fresh baby spinach
1/2 cup grated Parmesan cheese

Instructions

Heat olive oil in a large deep skillet or pot over medium-high heat.
Add the chicken pieces to the skillet and season with Italian seasoning, salt, and black pepper.
Cook the chicken until browned and cooked through, about 5-7 minutes, stirring occasionally.
Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
Pour in the chicken broth and heavy cream, stirring to combine.
Add the uncooked penne pasta and sun-dried tomatoes to the skillet, making sure the pasta is submerged in the liquid.
Bring the mixture to a boil, then reduce heat to medium-low and cover.
Simmer for 12-15 minutes, stirring occasionally, until the pasta is cooked al dente and most of the liquid is absorbed.
Stir in the fresh spinach and grated Parmesan cheese until the spinach wilts and the sauce becomes creamy.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve immediately.
