One Pot Mushroom Pasta

A quick and easy one pot mushroom pasta that combines tender mushrooms, garlic, and pasta cooked together in a flavorful broth for a comforting and delicious meal.

12 ounces dried fettuccine pasta
8 ounces cremini mushrooms, sliced
1 medium yellow onion, finely chopped
4 cloves garlic, minced
4 cups vegetable broth
1 cup water
2 tablespoons olive oil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions

Heat olive oil in a large deep skillet or pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and sliced mushrooms to the pot and cook for 5-6 minutes until the mushrooms are softened and browned.
Add the dried fettuccine pasta to the pot, then pour in the vegetable broth and water.
Sprinkle in the dried thyme, dried oregano, salt, and black pepper.
Stir everything together, making sure the pasta is submerged in the liquid.
Bring the mixture to a boil over medium-high heat, then reduce heat to medium-low and simmer uncovered.
Cook for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Remove the pot from heat and stir in the grated Parmesan cheese until melted and combined.
Sprinkle with chopped fresh parsley before serving.
