A simple and delicious one pot pasta recipe without cheese, perfect for a quick and easy meal with minimal cleanup.
12 ounces uncooked spaghetti
1 tablespoon olive oil
3 cloves garlic, minced
1 small onion, finely chopped
1 can (14.5 ounces) diced tomatoes with juice
4 cups vegetable broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups fresh spinach, roughly chopped
1/4 cup fresh parsley, chopped
In a large pot or deep skillet, heat the olive oil over medium heat.
Add the minced garlic and chopped onion to the pot and sauté for 2-3 minutes until fragrant and translucent.
Add the uncooked spaghetti to the pot, breaking it in half if necessary to fit.
Pour in the diced tomatoes with their juice and the vegetable broth.
Add the dried oregano, dried basil, red pepper flakes, salt, and black pepper.
Stir everything together to combine and make sure the pasta is mostly submerged in the liquid.
Bring the mixture to a boil over high heat.
Once boiling, reduce the heat to medium-low and simmer uncovered, stirring occasionally, for about 15 minutes or until the pasta is cooked and most of the liquid is absorbed.
When the pasta is nearly done, stir in the chopped fresh spinach and cook for an additional 1-2 minutes until wilted.
Remove the pot from heat and stir in the chopped fresh parsley.
Serve immediately.
