A quick and easy one pot pasta dish featuring tender pasta, juicy cherry tomatoes, and creamy feta cheese all cooked together for a flavorful and comforting meal.
12 ounces penne pasta
1 pint cherry tomatoes, halved
4 cloves garlic, minced
4 cups vegetable broth
1/4 cup olive oil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Salt, to taste
Freshly ground black pepper, to taste
7 ounces feta cheese, crumbled
1/4 cup fresh basil leaves, chopped
In a large pot or deep skillet, combine the penne pasta, halved cherry tomatoes, minced garlic, vegetable broth, olive oil, dried oregano, red pepper flakes, salt, and black pepper.
Bring the mixture to a boil over high heat, stirring occasionally to prevent the pasta from sticking.
Once boiling, reduce the heat to medium and simmer uncovered, stirring frequently, until the pasta is cooked al dente and most of the liquid has been absorbed, about 12 to 15 minutes.
Remove the pot from heat. Stir in the crumbled feta cheese and chopped fresh basil until the cheese is slightly melted and well combined.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve immediately, garnished with extra basil or feta if desired.
