1 tablespoon olive oil
3 cloves garlic, minced
2 cups vegetable broth
1 cup water
1 (9-ounce) package refrigerated cheese tortellini
1 cup cherry tomatoes, halved
2 cups fresh baby spinach
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt, to taste
Black pepper, to taste
Heat olive oil in a large pot over medium heat.
Add minced garlic and sauté for 1 minute until fragrant, stirring frequently to prevent burning.
Pour in vegetable broth and water, then bring the mixture to a boil.
Add cheese tortellini and cherry tomatoes to the boiling liquid.
