One Pot Pasta with Salmon and Spinach

A quick and delicious one pot pasta dish featuring tender salmon, fresh spinach, and a creamy sauce. Perfect for a nutritious weeknight dinner with minimal cleanup.

300 grams dried penne pasta
400 grams fresh spinach, washed and roughly chopped
300 grams fresh salmon fillet, skin removed and cut into bite-sized pieces
1 medium onion, finely chopped
3 cloves garlic, minced
750 milliliters vegetable or chicken broth
200 milliliters heavy cream
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried Italian herbs
50 grams grated Parmesan cheese
1 tablespoon lemon juice

Instructions

Heat the olive oil in a large deep skillet or pot over medium heat.
Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic and cook for another 1 minute until fragrant.
Pour in the vegetable or chicken broth and bring to a gentle boil.
Add the dried penne pasta to the pot and stir well to prevent sticking.
Reduce the heat to medium-low and cook the pasta uncovered for 10 minutes, stirring occasionally.
After 10 minutes, add the salmon pieces, chopped spinach, salt, black pepper, and dried Italian herbs to the pot.
Continue cooking for another 5-7 minutes until the salmon is cooked through and the pasta is tender. Stir gently to combine.
Pour in the heavy cream and lemon juice, stirring to create a creamy sauce. Heat through for 2 minutes without boiling.
Remove the pot from heat and stir in the grated Parmesan cheese until melted and well combined.
Serve the pasta hot, garnished with extra Parmesan if desired.
