One Pot Pasta with Schafskäse and Tomatoes

A simple and delicious one pot pasta recipe featuring creamy Schafskäse (sheep’s milk cheese) and fresh tomatoes, perfect for a quick and flavorful meal.

300 grams dried penne pasta
400 grams cherry tomatoes, halved
150 grams Schafskäse (sheep’s milk cheese), crumbled
4 cloves garlic, minced
1 small onion, finely chopped
750 milliliters vegetable broth
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Salt, to taste
Freshly ground black pepper, to taste
Fresh basil leaves, for garnish

Instructions

In a large pot or deep skillet, heat olive oil over medium heat.
Add the chopped onion and minced garlic, sauté for 2-3 minutes until softened and fragrant.
Add the halved cherry tomatoes to the pot and cook for 3-4 minutes until they start to soften.
Pour in the vegetable broth and bring to a gentle boil.
Add the dried penne pasta, dried oregano, red pepper flakes, salt, and black pepper.
Stir well to combine and ensure the pasta is submerged in the broth.
Reduce the heat to medium-low and simmer uncovered, stirring occasionally, for about 12-15 minutes or until the pasta is cooked and most of the liquid is absorbed.
Once the pasta is cooked, remove the pot from heat and gently fold in the crumbled Schafskäse until slightly melted and creamy.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve immediately, garnished with fresh basil leaves.
