One Pot Zucchini Pasta

A quick and easy one pot pasta dish featuring fresh zucchini, garlic, and Parmesan cheese. Perfect for a simple weeknight meal with minimal cleanup.

Ingredients

12 ounces dried spaghetti
2 medium zucchinis, thinly sliced
4 cloves garlic, minced
4 cups vegetable broth
1 cup water
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh basil

Instructions

In a large pot or deep skillet, combine the dried spaghetti, sliced zucchinis, minced garlic, vegetable broth, water, olive oil, salt, black pepper, and red pepper flakes.
Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent the pasta from sticking.
Reduce the heat to medium and continue to cook, stirring frequently, until the pasta is al dente and most of the liquid has been absorbed, about 12 to 15 minutes.
Remove the pot from heat and stir in the grated Parmesan cheese until melted and well combined.
Sprinkle chopped fresh basil over the pasta and gently toss to combine.
Serve immediately, garnished with additional Parmesan cheese if desired.
