One Skillet Creamy Gnocchi with Sausage and Spinach

1 pound Italian sausage, casings removed
1 tablespoon olive oil
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 pound potato gnocchi
2 cups baby spinach, roughly chopped
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt, to taste
Black pepper, to taste

Instructions

Heat olive oil in a large skillet over medium heat.
Add the Italian sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes.
Add the chopped onion to the skillet and cook until softened, about 3 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the potato gnocchi to the skillet and cook, stirring occasionally, until they start to brown lightly, about 5 minutes.
Pour in the heavy cream and chicken broth, stirring to combine.
Bring the mixture to a gentle simmer and cook for 3-4 minutes until the sauce thickens slightly.
Add the chopped spinach and cook until wilted, about 2 minutes.
Stir in the grated Parmesan cheese until melted and incorporated.
Season with salt and black pepper to taste.
Remove from heat and serve immediately.
