A quick and healthy sheet pan dinner featuring tender salmon fillets and roasted broccoli, seasoned with garlic and lemon for a flavorful, easy meal.
4 salmon fillets, skin on, about 6 ounces each
1 pound broccoli florets
3 tablespoons olive oil
3 cloves garlic, minced
1 lemon, thinly sliced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
Preheat the oven to 400°F (200°C).
Line a large baking sheet with parchment paper or lightly grease it with 1 tablespoon of olive oil.
In a large bowl, toss the broccoli florets with 2 tablespoons of olive oil, minced garlic, salt, and black pepper until evenly coated.
Spread the broccoli evenly on one side of the prepared baking sheet.
Place the salmon fillets on the other side of the baking sheet, skin side down.
Drizzle the remaining 1 tablespoon of olive oil over the salmon fillets.
Sprinkle paprika evenly over the salmon fillets.
Arrange lemon slices on top of the salmon fillets.
Place the baking sheet in the preheated oven and roast for 18 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender and slightly browned.
Remove from the oven and let rest for 2 minutes before serving.
