A flavorful and juicy salmon dish topped with a rich cowboy butter sauce made from butter, garlic, herbs, and spices. Perfect for grilling or baking, this recipe delivers a deliciously savory meal that’s easy to prepare.

4 salmon fillets, skin on, about 6 ounces each
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 tablespoon olive oil
1/2 cup unsalted butter, softened
3 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh chives, finely chopped
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 tablespoon fresh lemon juice

Instructions

Preheat your grill to medium-high heat or preheat the oven to 400°F (200°C).
Pat the salmon fillets dry with paper towels. Season both sides with kosher salt and freshly ground black pepper.
In a small bowl, combine the softened unsalted butter, minced garlic, chopped parsley, chopped chives, smoked paprika, ground cumin, chili powder, and fresh lemon juice. Mix until well combined to create the cowboy butter sauce.
Brush the salmon fillets lightly with olive oil to prevent sticking.
If grilling: Place the salmon fillets skin-side down on the grill. Cook for about 6-7 minutes, then carefully flip and cook for another 3-4 minutes until the salmon is opaque and flakes easily with a fork.
If baking: Place the salmon fillets skin-side down on a lined baking sheet. Bake for 12-15 minutes until the salmon is cooked through and flakes easily with a fork.
Remove the salmon from the grill or oven and immediately spoon generous amounts of the cowboy butter sauce over each fillet while still hot.
Serve the Cowboy Butter Salmon immediately with your favorite sides.
