Garlic Mushroom Chicken

2 chicken breasts
4 garlic cloves, sliced
1 cup button mushrooms, sliced
3 tablespoons unsalted butter
1 tablespoon olive oil
2 tablespoons fresh parsley, chopped
Salt to taste
Black pepper to taste

Instructions

Pat chicken breasts dry and season both sides with salt and black pepper.
Heat olive oil in a large pan over medium-high heat.
Add chicken breasts and pan-sear for about 5-6 minutes per side, until golden brown and cooked through. Remove chicken and set aside.
In the same pan, add 2 tablespoons butter and sliced garlic; sauté for 1-2 minutes until fragrant and garlic is slightly golden.
Add sliced mushrooms to the pan and cook for 5-7 minutes until soft and browned.
Stir in remaining 1 tablespoon butter to create a garlic butter sauce.
Return chicken breasts to the pan and spoon the mushroom garlic butter sauce over the top. Cook for an additional 1-2 minutes to warm through.
Plate chicken breasts in the center of plates, spoon mushrooms and sauce over, and garnish with chopped fresh parsley.
