Texas Roadhouse Grilled Salmon

4 salmon fillets, skin on, about 6 ounces each
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper

Instructions

Preheat your grill to medium-high heat (about 400°F).
In a small bowl, combine paprika, garlic powder, onion powder, dried oregano, dried basil, salt, black pepper, and cayenne pepper to make the seasoning blend.
Pat the salmon fillets dry with paper towels.
Brush both sides of each salmon fillet with olive oil.
Sprinkle the seasoning blend evenly over both sides of the salmon fillets, pressing gently to adhere.
Place the salmon fillets skin-side down on the preheated grill.
Grill the salmon for about 5-6 minutes without moving them, allowing the skin to crisp and the fish to cook about two-thirds of the way through.
Carefully flip the salmon fillets and grill for an additional 4-6 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
Remove the salmon from the grill and let it rest for 2 minutes before serving.
