Air Fryer Coconut Shrimp with Dipping Sauce

Crispy and golden air fryer coconut shrimp served with a sweet and tangy dipping sauce. This quick and easy recipe is perfect for a delicious appetizer or snack.

1 pound large shrimp, peeled and deveined, tails on
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1 cup shredded sweetened coconut
1 cup panko breadcrumbs
Cooking spray
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon lime juice
1 teaspoon honey

Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a shallow bowl, combine the all-purpose flour, salt, and black pepper.
In a second shallow bowl, beat the eggs until smooth.
In a third shallow bowl, mix together the shredded coconut and panko breadcrumbs.
Dip each shrimp first into the flour mixture, shaking off excess.
Then dip the shrimp into the beaten eggs, allowing excess to drip off.
Finally, coat the shrimp evenly with the coconut and panko mixture, pressing gently to adhere.
Place the coated shrimp in a single layer in the air fryer basket. Lightly spray the shrimp with cooking spray.
Cook the shrimp in the air fryer at 400°F (200°C) for 8 to 10 minutes, flipping halfway through, until golden brown and crispy.
While the shrimp cooks, prepare the dipping sauce by whisking together the mayonnaise, sweet chili sauce, lime juice, and honey in a small bowl until smooth.
Serve the air fryer coconut shrimp hot with the dipping sauce on the side.
