A simple and flavorful sheet pan lemon salmon recipe that combines tender salmon fillets with fresh lemon slices and herbs, all roasted together for an easy, healthy dinner.
4 salmon fillets, skin on, about 6 ounces each
2 tablespoons olive oil
1 lemon, thinly sliced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt, 1 teaspoon
Black pepper, 1/2 teaspoon
Fresh parsley, chopped, 2 tablespoons
Preheat the oven to 400°F (200°C).
Line a large sheet pan with parchment paper or lightly grease it with olive oil.
Place the salmon fillets on the sheet pan skin side down.
In a small bowl, mix the olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper.
Brush the olive oil mixture evenly over the salmon fillets.
Arrange the lemon slices on top of and around the salmon fillets.
Roast the salmon in the preheated oven for 12 to 15 minutes, or until the salmon flakes easily with a fork and is cooked through.
Remove from the oven and sprinkle with chopped fresh parsley before serving.
