A hearty and tender Amish-style pot roast slow-cooked to perfection with fresh vegetables and rich seasonings. This comforting dish is perfect for family dinners and easy to prepare in your slow cooker.
3 pounds beef chuck roast
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
4 large carrots, peeled and cut into 2-inch pieces
3 medium yellow potatoes, peeled and cut into quarters
1 large yellow onion, cut into wedges
3 cloves garlic, minced
2 cups beef broth
1/4 cup tomato paste
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
Season the beef chuck roast evenly with salt and black pepper on all sides.
Heat the vegetable oil in a large skillet over medium-high heat.
Sear the roast in the hot oil for about 4 minutes on each side until browned. Remove the roast and set aside.
Place the carrots, potatoes, and onion into the bottom of the slow cooker.
Add the minced garlic on top of the vegetables.
In a medium bowl, whisk together beef broth, tomato paste, Worcestershire sauce, dried thyme, and dried rosemary until combined.
Place the seared roast on top of the vegetables in the slow cooker.
Pour the broth mixture over the roast and vegetables.
Add the bay leaves to the slow cooker.
Cover and cook on low for 8 hours, or until the beef is tender and easily shredded with a fork.
Remove the bay leaves before serving.
Serve the pot roast with the cooked vegetables and spoon some of the cooking liquid over the top.
