Slow Cooker Buffalo Chicken with Greek Yogurt

A healthy and flavorful slow cooker buffalo chicken recipe made tender and juicy, then mixed with creamy Greek yogurt for a delicious twist. Perfect for sandwiches, wraps, or as a protein-packed snack.

1.5 pounds boneless skinless chicken breasts
1 cup buffalo wing sauce
1/2 cup low sodium chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup plain Greek yogurt (2% or whole milk)
2 tablespoons chopped fresh chives

Instructions

Place the chicken breasts in the slow cooker.
In a medium bowl, whisk together the buffalo wing sauce, chicken broth, garlic powder, onion powder, smoked paprika, salt, and black pepper until combined.
Pour the sauce mixture evenly over the chicken breasts in the slow cooker.
Cover and cook on low for 4 hours, or until the chicken is fully cooked and tender.
Carefully remove the chicken breasts from the slow cooker and place them on a cutting board.
Using two forks, shred the chicken into bite-sized pieces.
Return the shredded chicken to the slow cooker and stir to combine with the remaining sauce.
Allow the shredded chicken to cool slightly for 5 minutes, then stir in the Greek yogurt until fully incorporated and creamy.
Mix in the chopped fresh chives.
Serve warm as a filling for sandwiches, wraps, or over a salad.
