Slow Cooker Chicken and Potatoes

A comforting and easy slow cooker recipe featuring tender chicken thighs and flavorful potatoes cooked to perfection with garlic and herbs.

4 bone-in, skin-on chicken thighs
1.5 pounds baby potatoes, halved
1 medium yellow onion, sliced
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1/2 cup low-sodium chicken broth

Instructions

Place the halved baby potatoes and sliced onion in the bottom of the slow cooker.
In a small bowl, mix together the minced garlic, dried thyme, dried rosemary, paprika, salt, and black pepper.
Rub the chicken thighs evenly with olive oil and then coat them with the spice mixture.
Arrange the seasoned chicken thighs on top of the potatoes and onions in the slow cooker.
Pour the chicken broth over the potatoes and around the chicken thighs.
Cover the slow cooker with the lid and cook on low for 6 hours, or until the chicken is cooked through and the potatoes are tender.
Once cooked, carefully remove the chicken and potatoes from the slow cooker and serve warm.
