A simple and comforting slow cooker chicken dinner featuring tender chicken thighs cooked with carrots, potatoes, and onions in a flavorful broth.
4 bone-in, skin-on chicken thighs
4 medium carrots, peeled and cut into 1-inch pieces
4 medium red potatoes, quartered
1 large yellow onion, sliced
3 cloves garlic, minced
1 cup low-sodium chicken broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
Heat olive oil in a large skillet over medium-high heat.
Season chicken thighs with salt and black pepper on both sides.
Sear chicken thighs in the skillet for 3-4 minutes per side until golden brown. Remove from heat.
Place carrots, potatoes, onion, and garlic into the bottom of the slow cooker.
Sprinkle dried thyme and dried rosemary over the vegetables.
Pour chicken broth over the vegetables.
Place the seared chicken thighs on top of the vegetables in the slow cooker.
Cover and cook on low for 6 hours, or until the chicken is cooked through and vegetables are tender.
Remove chicken and vegetables from the slow cooker and serve warm.
