A simple and flavorful slow cooker chicken recipe that results in tender, juicy chicken perfect for any meal. This recipe uses basic ingredients and requires minimal prep, making it ideal for busy days.
4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 cup chicken broth
2 tablespoons olive oil
1 medium onion, sliced
3 cloves garlic, minced
1 tablespoon fresh thyme leaves
Season the chicken breasts evenly with salt, black pepper, garlic powder, onion powder, and smoked paprika on both sides.
Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and sear for 2-3 minutes on each side until lightly browned. Remove from heat.
Place the sliced onion and minced garlic at the bottom of the slow cooker.
Add the seared chicken breasts on top of the onions and garlic.
Pour the chicken broth over the chicken breasts.
Sprinkle fresh thyme leaves evenly over the chicken.
Cover the slow cooker with the lid and cook on low for 6 hours or until the chicken is cooked through and tender.
Once cooked, remove the chicken from the slow cooker and let it rest for 5 minutes before serving.
