A hearty and healthy slow cooker chicken kale soup packed with tender chicken, nutritious kale, and flavorful vegetables. Perfect for an easy, comforting meal.
1 pound boneless skinless chicken breasts
6 cups low-sodium chicken broth
1 medium yellow onion, diced
3 medium carrots, peeled and sliced
3 celery stalks, sliced
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 bunch kale, stems removed and leaves chopped (about 4 cups)
1 tablespoon olive oil
1 tablespoon lemon juice
Place the chicken breasts in the bottom of the slow cooker.
Add the diced onion, sliced carrots, sliced celery, and minced garlic on top of the chicken.
Pour in the chicken broth.
Sprinkle dried thyme, dried oregano, black pepper, salt, and crushed red pepper flakes over the ingredients.
Cover and cook on low for 6 hours, or until the chicken is cooked through and vegetables are tender.
Remove the chicken breasts from the slow cooker and place on a cutting board. Shred the chicken using two forks.
Return the shredded chicken to the slow cooker.
Add the chopped kale and olive oil to the slow cooker. Stir well to combine.
Cover and cook on high for an additional 15 minutes, or until the kale is wilted and tender.
Stir in the lemon juice.
Taste and adjust seasoning with additional salt and pepper if desired.
Serve hot.
