A tender and flavorful slow cooker chicken roast seasoned with herbs and vegetables, perfect for an easy and comforting meal.
1 whole chicken (about 4 pounds), giblets removed
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 tablespoons olive oil
1 large onion, peeled and quartered
4 cloves garlic, peeled and smashed
3 medium carrots, peeled and cut into 2-inch pieces
3 celery stalks, cut into 2-inch pieces
1 cup low-sodium chicken broth
Pat the whole chicken dry with paper towels.
In a small bowl, mix together salt, black pepper, garlic powder, dried thyme, and dried rosemary.
Rub the olive oil all over the chicken, then evenly coat the chicken with the seasoning mixture.
Place the quartered onion, smashed garlic cloves, carrots, and celery in the bottom of the slow cooker.
Pour the chicken broth over the vegetables.
Place the seasoned chicken on top of the vegetables in the slow cooker, breast side up.
Cover and cook on low for 6 hours, or until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear.
Carefully remove the chicken from the slow cooker and let it rest for 10 minutes before carving.
Serve the chicken with the cooked vegetables and spoon some of the cooking juices over the top.
