A creamy and comforting slow cooker chicken spaghetti recipe that’s easy to prepare and perfect for a hearty family dinner. Tender chicken, spaghetti noodles, and a cheesy tomato sauce come together in the slow cooker for a delicious meal.
1 pound boneless, skinless chicken breasts
12 ounces uncooked spaghetti noodles
1 (10.5 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can condensed cream of chicken soup
1 (14.5 ounce) can diced tomatoes with green chilies, undrained
1 cup chicken broth
1 medium onion, finely chopped
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon black pepper
1/2 teaspoon salt
Place the boneless, skinless chicken breasts in the bottom of the slow cooker.
Add the chopped onion, cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies (including the liquid), chicken broth, garlic powder, chili powder, salt, and black pepper to the slow cooker. Stir gently to combine.
Cover and cook on low for 4 hours, or until the chicken is cooked through and tender.
Remove the chicken breasts from the slow cooker and shred them using two forks.
Break the uncooked spaghetti noodles in half and add them to the slow cooker along with the shredded chicken. Stir to combine.
Cover and cook on high for 30 minutes, or until the spaghetti noodles are tender.
Stir in the shredded cheddar cheese and Monterey Jack cheese until melted and well combined.
Serve the chicken spaghetti hot, garnished with additional cheese if desired.
